Citrus Shrimp Cocktail

Jumbo shrimp are cooked sous vide in a simple marinade of Old Bay seasoning and fresh lemon. They emerge plump, flavorsome and ready to tango with some zesty citrus mayo.

Ingredients


Measurements:

  • extra-virgin olive oil icon
    2 tbsp extra-virgin olive oil
  • sea salt icon
    ½ tsp sea salt
  • Old Bay seasoning icon
    ½ tsp Old Bay seasoning
  • lemon icon
    ½ lemon

    cut into 2mm slices

  • jumbo raw king shrimp icon
    16 jumbo raw king shrimp

    heads removed

  • coarsely chopped flat-leaf parsley icon
    2 tbsp coarsely chopped flat-leaf parsley

For the citrus mayo

  • mayonnaise icon
    ½ cup (110 g) mayonnaise
  • fresh lemon juice icon
    2 tbsp fresh lemon juice
  • Old Bay seasoning icon
    ¼ tsp Old Bay seasoning
  • aji dulce powder or aleppo pepper icon
    ¼ tsp aji dulce powder or aleppo pepper

Instructions

    Attach the HydroPro to the side of a (max 45 liters) pot or large vessel. Fill with water until approximately halfway up the circulator. Set the temperature to 60°C and the time to 12 minutes if using peeled shrimp, or 15 minutes if using unpeeled shrimp, using the Manual Cooking from the main menu and press Start.

    Combine the oil, salt, Old Bay seasoning, lemon slices in a large bowl and mix to combine. Add the shrimp and toss to coat in the marinade. Place the mixture in a single layer in a vacuum seal bag and seal under full vacuum, according to the manufacturer instructions. You can either place the bagged shrimp in the water bath or refrigerate until the water has preheated.

    Once the water reaches temperature, carefully lower the sealed bag into the water bath, ensuring it is fully submerged.

    To make the citrus mayo, place the mayonnaise, lemon juice, Old Bay seasoning and aji dulce powder in a small bowl and whisk to combine.

    When the timer signals that the shrimp are done, carefully remove the bag from the water. Place the bag in a bowl of iced water to chill, then remove the shrimp and place onto a tray. Reserve the cooking juices.

    Tip: You can skip the chill step and serve the shrimp warm if you prefer.

    Transfer the shrimp to a serving plate, pour over the reserved cooking juices and sprinkle with parsley. Serve with the citrus mayonnaise.
