Spicy Buffalo Chicken Wings

Sweet 'n' spicy, crispy 'n' sticky, these Buffalo wings get perfectly cooked in a sous vide bag, then simply defrosted. Deep-fried to crisp deliciousness, then tossed in our signature Buffalo sauce and finished with a side of blue cheese sauce. It’s win wing situation!

For the chicken

  • chicken wing drumettes and flats (party wings) icon

For the spicy Buffalo sauce

    ½ cup (120 ml) hot sauce
  • unsalted butter icon
    60 g unsalted butter

    1 tbsp light brown sugar
  • apple cider vinegar icon
    2 tsp apple cider vinegar
  • salt icon
    ½ tsp salt
  • garlic powder icon
    ¼ tsp garlic powder

For the blue cheese sauce

  • creamy blue cheese icon
    120 g creamy blue cheese

    crumbled

  • sour cream icon
    ⅓ cup (80 g) sour cream
  • mayonnaise icon
    ¼ cup (55 g) mayonnaise
  • fresh lemon juice icon
    1 tbsp fresh lemon juice
  • chilled milk icon
    2 tbsp chilled milk
  • clove garlic icon
    1 clove garlic

Instructions

    Place the chicken wings in a large bowl. Add the salt and vegetable oil and toss to coat. Place the chicken in a large vacuum seal bag, flatten to a single layer and seal under full vacuum, according to the manufacturer’s instructions. Refrigerate while the water bath preheats.

    Tip: The bag can be dated and labeled for freezing. Alternatively, if you’re not planning to freeze the chicken you can use the microwave-safe, zipper-lock freezer bag method.

    Attach the HydroPro to the side of a pot or large vessel (max 45 liters). Fill with water until approximately halfway up the circulator. Set the temperature to 74°C and the time to 1 hour using Manual Cooking from the main menu and press Start.

    Once the water reaches temperature, carefully lower the sealed bag into the water bath, ensuring it is fully submerged.

    When the timer signals, carefully remove the bag from the water, open and drain through a strainer placed over a large bowl. Transfer the wings to a tray lined with paper tower and pat dry.

    Cook the wings in an oven, preheated to air fry 190°C for 15 minutes, then broil on high for 4 minutes. Meanwhile, continue to the next step.

    Tip: This recipe has been optimized for the Joule Oven Air Fryer Pro and the Smart Oven Air Fryer Pro. Alternatively, deep fry the wings in batches, at 180°C for approximately 5 minutes, or until golden brown. Transfer to a large bowl lined with paper towel to drain.

    To make the spicy Buffalo sauce, place the hot sauce, melted butter, sugar, vinegar, salt and garlic powder in a large bowl and whisk to combine.

    To make the blue cheese sauce, place the blue cheese in a bowl, add the sour cream and mayonnaise and whisk to combine. Add the lemon juice, milk and garlic and whisk until well combined. Set aside.

    Add the wings to the buffalo sauce and toss to coat. Arrange on a serving platter and serve with the blue cheese sauce and celery sticks.
