Air-Fried Buffalo Wings with Blue Cheese Sauce

These Buffalo wings are an American classic, crispy on the outside and juicy on the inside all without a deep fryer in site! Serve with a creamy blue cheese sauce and celery sticks, they will have you craving for more.

Measurements:

For the chicken wings

  • chicken wing drumettes and flats (party wings) icon
    1.3 kg chicken wing drumettes and flats (party wings)
  • milk powder icon
    1 tbsp milk powder
  • kosher salt icon
    1 tsp kosher salt
  • vegetable oil icon
    1 tbsp vegetable oil
  • celery stick icon

    to serve

For the Buffalo sauce

  • hot sauce icon
    ½ cup (120 ml) hot sauce
  • unsalted butter icon
    60 g unsalted butter

    melted

  • light brown sugar icon
    1 tbsp light brown sugar
  • apple cider vinegar icon
    2 tsp apple cider vinegar
  • kosher salt icon
    ½ tsp kosher salt
  • garlic powder icon
    ¼ tsp garlic powder

For the blue cheese sauce

  • creamy blue cheese icon
    120 g creamy blue cheese

    crumbled, plus extra for garnish

  • sour cream icon
    ⅓ cup (80 g) sour cream
  • mayonnaise icon
    ¼ cup (60 g) mayonnaise
  • fresh lemon juice icon
    1 tbsp fresh lemon juice
  • milk icon
    2 tbsp milk
  • clove garlic icon
    1 clove garlic

Instructions

    Insert the wire rack into position 7. Place the roasting pan on the rack to catch any drips during cooking. Place the air fry basket into rack position 3. Set the oven to Air Fry, Super Convection, 190°C, for 15 minutes and press Start to preheat. Meanwhile, continue to the next step.

    Place the wings on paper towels and pat dry to remove any excess moisture.

    Place the milk powder, salt and oil in a large bowl and whisk to combine. Add the wings and mix to coat.

    Once preheated, carefully place the wings in the basket, evenly spaced apart and air fry for 15 minutes. When the oven signals at the end of cooking, adjust the oven to Broil, High for 4 minutes and press Start. Meanwhile, continue to the next step.

    Place all the ingredients listed below in a large bowl and whisk to combine. Set aside.

    Place the blue cheese in a bowl, add the sour cream and mayonnaise and whisk to combine. Add the remaining ingredients listed below and whisk until well combined. Set aside.

    The wings should be browned and cooked through. If not, broil a little longer.

    Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.

    Remove the basket from the oven and transfer the wings to the Buffalo sauce and turn to coat. Remove the roasting pan from the oven and discard the cooking juices. Return the wings and any sauce from the bowl to the roasting pan.

    Move the wire rack to position 3. Place the pan in the oven and start the timer.

    The wings should be caramelized. If not, give it a bit more.

    Stand the wings in the pan for 5 minutes to absorb some of the pan juices.

    Crumble some blue cheese over the blue cheese sauce and serve the wings with the sauce and celery sticks.
