Autopilot will begin by cooking the wings and lightly coloring them on the outside followed by high heat from above to finish, giving them a wonderful, caramelized skin. The addition of milk powder helps to achieve a fantastic color.

  • 3 lb chicken wing drumettes and flats (party wings)
  • 2 tbsp vegetable oil
  • 1 tbsp milk powder
  • 1½ tsp kosher salt
  • 1 tsp chili powder
  • ¾ tsp ground black pepper
  • ½ tsp cayenne pepper
  • ¼ tsp smoked paprika
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ⅛ tsp ground cumin
  • Chopped cilantro

  • 1Insert the wire rack into position 7, place the roasting pan on the rack so it sits beneath the basket to catch any drips during cooking. Place the air fry basket into rack position 3. Meanwhile, continue to the next step.
  • 2Place the wings on paper towels and pat dry.
  • 3Place the ingredients listed below in a large bowl and whisk to combine. Add the wings and toss to coat.
  • 4Once preheated, carefully place the wings in the basket, evenly spaced apart and start Autopilot.
  • 5The wings should be browned and cooked through. If not, give it a bit more.
  • 6Transfer the wings to a platter, sprinkle with cilantro, squeeze over lemon juice and serve.
