
Classic Oatmeal and Raisin Cookies
Loaded with old fashioned oats and bursts of raisins, these cookies are so easy to make. The brown sugar adds a lovely caramel flavor and produces a deliciously soft and chewy cookie.

Measurements:
- 4 oz unsalted butter
at room temperature
- ½ cup (3½ oz) dark brown sugar
- ⅓ cup (2 oz) white sugar
- 1 large egg
at room temperature
- 2 tsp vanilla extract
- ⅔ cup (3½ oz) all-purpose flour
- ½ tsp baking soda
- ⅛ tsp salt
- 2 tsp ground cinnamon
- ⅛ tsp ground ginger
- 1½ cups (4 oz) old fashioned rolled oats
- 1 cup (5 oz) raisins
Instructions
- 1Beat the butter and sugar on high speed for 2 minutes, or until pale.
- 2Beat on medium speed until combined.
- 3Beat on medium speed until combined.
- 4Beat on low speed until just combined.
- 5Insert the wire rack into position 5. Meanwhile, continue to the next step.
- 6Line the pizza pan with parchment paper. Measure out 12 x ¼ cups of dough and roll into balls. Evenly space 6 balls on the pan and press to flatten slightly.
- 7Once preheated, place the pan in the oven and start the timer.
- 8The cookies should be lightly browned. If not, give it a bit more.
- 9Stand on the pan for 5 minutes then transfer to a wire rack to cool completely.
- 10Cook the remaining dough.
- 11Check the cookies are ready. If not, give it a bit more.
- 12Store in an airtight container for up to 5 days.
