
Tuna Melt Club Sandwich
A triple layered favorite, bursting with a creamy tuna filling and melty fontina cheese. Fresh herbs and lemon give it a flavor packed punch. And while the ingredients are nicely simple, this is no humble melt!

Ingredients
Measurements:
- 12 slices white bread
- 2 oz butter
at room temperature, to spread
- 7 oz fontina cheese
finely grated
- 4 tomatoes
thinly sliced
- 8 romain lettuce leaves
halved
For the tuna filling:
- 1 large egg
- 3 x 5 oz cans tuna in water
drained
- ½ cup (3¾ oz) mayonnaise
- 3 tbsp sour cream
- 1 celery stalk
finely diced
- 1 small Belgian endive
thinly sliced
- ¼ cup (1¼ oz) capers
rinsed, patted dry and finely chopped
- 1 dill pickle
finely chopped
- 1 tbsp chopped flat-leaf parsley
- 1 tbsp chopped tarragon
- 1 tsp thinly sliced chives
- 1 tsp grated lemon zest
- 1 tbsp fresh lemon juice
- Kosher salt
to season
- Freshly ground black pepper
to season
Instructions
- 1Place the egg in a small saucepan of boiling water and cook for 10 minutes.
- 2Carefully remove the egg from the water and place in iced water to cool. Peel and finely grate.
- 3Place all the ingredients listed below in a bowl, add the grated egg and mix to combine.
- 4Place half the bread, in a single layer, in the air fry basket and insert the basket into rack position 2. Start the timer. When the Rotate Remind signals, turn the bread over and toast the other side.
- 5The bread should be lightly toasted. If not, give it a bit more. Remove the bread from the basket.
- 6Place the remaining bread in the air fry basket and insert the basket into rack position 2. Start the timer. When the Rotate Remind signals, turn the bread over and toast the other side.
- 7If not, give it a bit more.
- 8Place 8 slices of toast on a cutting board. Spread with the butter. Divide the tuna filling between the 8 slices and sprinkle with the cheese. Place 4 of the tuna toasts in the parchment lined roasting pan.
- 9Insert the wire rack into position 5. Place the pan in the oven and start the timer. When the oven signals, remove the pan, transfer the melts to the cutting board. Place the remaining tuna slices in the roasting pan.
- 10Place the pan in the oven and start the timer. When the oven signals, remove the pan, transfer the melts to the cutting board.
- 11Place half the tomato slices and lettuce on 4 of the tuna melts. Repeat layering with the remaining tuna melt slices, tomato and lettuce. Butter the remaining toast and place buttered-side down on top.
- 12Insert a skewer into each corner of the stack, piercing through all the layers to hold the sandwich together. Cut each sandwich into 4 triangles and serve.
