Crisp on the outside and tender within, these golden corn fritter jaffles are packed with sweet kernels, fresh coriander and a gentle lift from red onion. Toasted in the jaffle maker until sealed and golden, they’re finished with chunky smashed avocado and a spoonful of tomato relish for a bright, savoury contrast. For the fritter batter

  • egg icon
    1 egg
  • milk icon
    3 tbsp (45 ml) milk
  • plain flour icon
    ⅓ cup (50 g) plain flour
  • cornflour icon
    ¼ cup (35 g) cornflour
  • baking powder icon
    1 tsp baking powder
  • fine salt icon
    ¼ tsp fine salt
  • corn cob icon
    2 (240 g) corn cobs

    kernels removed, approximately 1½ cups

  • finely chopped coriander icon
    3 tbsp finely chopped coriander
  • small red onion icon
    ½ small red onion

    very finely chopped

  • olive oil spray icon
    Olive oil spray

For the smashed avo

  • ripe avocado icon
    1 ripe avocado
  • fresh lime juice icon
    1 tsp fresh lime juice
  • sea salt icon
    Sea salt

    to taste

To serve

  • tomato relish icon

Instructions

    To make the fritter batter, whisk the egg and milk together in a small jug.

    Combine the plain flour, cornflour, baking powder and salt in a bowl. Pour the egg mixture into the dry ingredients and whisk until smooth.

    Fold through the corn kernels, coriander and onion. The batter should be thick yet spoonable, holding its shape when dropped from a spoon.

    Preheat the jaffle maker. Lightly grease the plates with olive oil spray.

    Once preheated, spoon the batter evenly into the jaffle plates, filling each cavity about three-quarters full to allow for expansion. Carefully close the lid and clip the handles together. Toast for 7 minutes, or until golden brown and cooked through.

    Meanwhile, make the smashed avo. Halve the avocado, scoop the flesh into a bowl and mash with lime juice using the back of a fork. Season to taste with salt, keeping the texture slightly chunky.

    Carefully remove the fritters from the jaffle maker and transfer to a plate. Serve with the smashed avo and tomato relish.
