2 large eggs
2 tbsp white sugarplus ¼ cup (50g), extra
⅓ cup (80 ml) thickened cream
1 tsp vanilla bean paste
3 hot cross bunssplit in half
Icing sugarto dust

Place the eggs, 2 tablespoons sugar, cream and vanilla in a bowl and whisk to combine.

Preheat the jaffle maker.

Meanwhile, place the hot cross buns in the cream mixture and turn to soak.

Once preheated, place the buns in the jaffle maker and sprinkle with the extra sugar. Carefully close the lid and clip the handles together. Toast for 3 minutes, or until golden brown. Carefully remove from the jaffle maker. They will be very hot as the sugar creates a caramel.
