For the sauce

For the beef

    450 g beef rump

    thinly sliced

For the vegetables

Instructions

    To prepare the sauce, carefully assemble the processor with the grey spindle and green S-blade in the bowl. Add the garlic and process until finely chopped, scraping down the side as needed. Remove 1 tablespoon garlic and reserve. Add all the remaining sauce ingredients to the processor bowl and process until well combined, scraping down the side and base as needed. Transfer to a mixing bowl and set aside.

    Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 220°C, for 12 minutes and press Start to preheat.

    Tip: Recipe has been optimized for the Joule Oven Air Fryer Pro and Smart Oven Air Fryer Pro.

    To prepare the beef, place the beef in a bowl, add ½ teaspoon reserved garlic and 2 tablespoons of the prepared sauce and toss, add the soy sauce, 1 teaspoon sesame oil and sugar and toss well to combine. Cover and set aside to marinate while preparing the vegetables.

    To prepare the vegetables, clean the processor bowl and reassemble with the grey spindle and orange adjustable slicer set on 3 and slice the carrots. Transfer to a mixing bowl.

    Adjust the slicer to setting 2 and slice the zucchini. Transfer to a separate bowl.

    Slice the onion and transfer to a separate bowl.

    Slice the mushrooms and transfer to a separate bowl.

    Place the bean sprouts in a separate bowl. Toss each prepared vegetable with ¼ teaspoon reserved garlic, ½ teaspoon sesame oil and a little salt. Transfer them to a sheet pan, keeping the vegetables separate.

    Once preheated, place the pan in the oven and air fry for 12 minutes. When the oven signals at the end of cooking adjust the oven to Broil, High, for 5 minutes and press Start. Broil the vegetables until lightly charred and tender.

    When the vegetables have about 10 minutes remaining, heat a large frying pan over high heat. Add 1 teaspoon remaining sesame oil and the beef and cook stirring, for 1 to 2 minutes, or until browned. Remove from the pan and keep warm.

    Wipe out the pan. Add a little sesame oil, spinach and 1 teaspoon reserved garlic and cook until just wilted. Season with salt. Remove from the pan and drain well.

    Wipe out the pan again, add a little sesame oil and fry the eggs to your liking.

    Divide the rice between serving bowls. Arrange the beef, vegetables and spinach over the rice. Top each bowl with a fried egg and spoon over the sauce, sprinkle with sesame seeds and serve.
