Quick Strawberry Sorbet with Fizzy Lime Dust

A vibrant strawberry sorbet that's delicious on its own, ready in minutes with no churning required. Made with frozen fruit in the food processor, it delivers a smooth, refreshing dessert almost instantly. Finish with the optional Fizzy Dust for a bright, zesty twist.

Ingredients


Measurements:

For the fizzy lime dust

  • powdered sugar icon
    ½ cup (70 g) powdered sugar
  • tartaric acid icon
    ½ tsp tartaric acid
  • citric acid icon
    ½ tsp citric acid
  • baking soda icon
    ¼ tsp baking soda
  • lime icon
    1 lime

For the strawberry sorbet

  • powdered sugar icon
    ⅔ cup (90 g) powdered sugar
  • warm tap water icon
    ⅓ cup (80 ml) warm tap water
  • frozen sliced strawberries icon
    450 g frozen sliced strawberries
  • fresh lime juice icon
    2 tbsp fresh lime juice

Instructions

    To make the fizzy lime dust, combine the sugar, tartaric acid, citric acid and baking soda in a bowl. Using a microplane, grate the lime zest directly into the bowl and whisk to combine. Set aside until required. Juice the lime. Reserve 2 tablespoons for the sorbet.

    To make the sorbet, carefully assemble the processor with the grey spindle and green S-blade in the bowl. Add the sugar and water and process for 1 minute. Add the frozen strawberries and lime juice and process for a further 1 minute, or until pureed. Scrape down the side and process for a further 30 seconds, or until smooth.

    Tip: Keep the strawberries in the freezer until ready to process.

    Serve immediately topped generously with the fizzy lime dust, or transfer to an airtight container and freeze for 2 hours for a firmer set.
