Measurements:

For the overnight oats

  • old fashioned rolled oats icon
    ½ cup (40 g) old fashioned rolled oats
  • coconut milk icon
    ⅔ cup (160 ml) coconut milk
  • plain Greek or coconut yogurt icon
    ¼ cup (60 g) plain Greek or coconut yogurt
  • dried apricot icon
    6 (40 g) dried apricots

    chopped

For the smoothie

  • coconut milk icon
    1 cup (240 ml) coconut milk
  • large pink lady apple icon
    1 (200 g) large pink lady apple

    quartered and cored

  • unsweetened coconut flakes icon
    ¼ cup (20 g) unsweetened coconut flakes
  • pure maple syrup icon
    2 tbsp pure maple syrup
  • ground cinnamon icon
    ½ tsp ground cinnamon
  • ice cube icon
    4 ice cubes

To serve

  • apple icon

    thinly sliced

  • raisins icon
    Raisins
  • unsweetened coconut flakes icon
    Unsweetened coconut flakes

    toasted

  • pistachios icon

Instructions

  • 1

    For the overnight oats, combine the oats, coconut milk, yogurt and apricots in a bowl. Cover and refrigerate for 2 hours or overnight, to soften the oats.

    Transfer the oat mixture to the blender. Add the smoothie ingredients and secure the lid.

  • 3

    Select the SMOOTHIE program and blend until the program finishes.

  • 4

    Divide evenly between 2 chilled bowls.

  • 5

    Top with apple, raisins, toasted coconut and pistachios and serve.
