Place the apples, butter, sugar, vanilla, lemon juice, cinnamon and salt in a pot over medium heat. Cook, stirring occasionally, for 3 minutes, or until simmering. Cover and continue cooking, stirring occasionally, for 8 minutes, or until the apples are tender and the syrup is thick.
Spread the filling in a shallow dish and refrigerate for 20 minutes to cool. This will prevent the pastry from getting soggy. Meanwhile, continue to the next step.
Whisk the egg and water together to make the egg wash. The water thins down the egg making it easier to brush.
Cut each pastry sheet into 4 squares. Leave one square on the board and refrigerate the remaining until ready to use.
Working with one square at a time, brush the edges with the egg wash. Place a heaped tablespoon of the apple mixture in the center. Fold in half and press to remove air bubbles and seal. Press with a fork to secure the seal. Place in the refrigerator and repeat with the remaining pastry and filling.
Refrigerate for 30 minutes, or until the pastry is firm.
Set the oven to Air Fry, Super Convection, 165°C, for 26 minutes and press Start to preheat. Meanwhile, continue to the next step.
Brush the turnovers with the egg wash and score the pastry 3 times. Sprinkle with the sugar. Spray the air fry basket with oil and place the turnovers, evenly spaced in the basket.
Once preheated, place the basket in rack position 3 and cook for 26 minutes.
The turnovers should be browned, puffed and crisp. If not, cook a little longer.
Dust with sugar. Serve warm or at room temperature.
