Air-Fried Pistachio and Almond Biscotti

Studded with pistachios and almonds, these twice baked Italian cookies are crunchy, munchy and nutty. The oven does the hard work, baking and then air frying for the perfect crisp finish.

Ingredients


Measurements:

  • all-purpose flour icon
    1⅔ cups (250 g) all-purpose flour
  • ground almond icon
    ⅓ cup (40 g) ground almonds
  • baking powder icon
    2 tsp baking powder
  • 1 stick (115g) unsalted butter icon
    1 stick (115g) unsalted butter

    diced, at room temperature

  • white sugar icon
    ¾ cup (150 g) white sugar
  • vanilla extract icon
    1 tsp vanilla extract
  • fine salt icon
    ¼ tsp fine salt
  • large egg icon
    3 large eggs
  • shelled pistachios icon
    ½ cup (70 g)
  • raw almonds icon
    ½ cup (80 g) raw almonds

Instructions

    Insert the wire rack into position 6. Set the oven to Bake, Convection, 180°C, for 25 minutes and press Start to preheat. Meanwhile, continue to the next step.

    Place the flour, ground almonds and baking powder in a bowl and stir to combine. Set aside.

    Using a stand mixer fitted with the paddle attachment, beat the butter, sugar, vanilla and salt until pale and creamy. Add the eggs one at a time, scraping the side of the bowl occasionally.

    Add the flour mixture and mix until just combined. Add the pistachios and almonds and mix to combine.

    Turn the dough out onto a floured countertop. Divide into two portions and shape each portion into a loaf, approximately 28cm long. Place the loaves in the parchment paper-lined roasting pan, evenly spaced so there is room for them to spread.

    Once preheated, place the pan in the oven and cook for 25 minutes.

    The loaves should be golden brown. If not, cook a little longer.

    Transfer the loaves to a wire rack and cool for 5 minutes. Meanwhile, adjust the oven to Air Fry, Super Convection, 150°C, for 10 minutes and press Start.

    Using a serrated knife, cut each loaf into approximately 1.5cm thick slices. Place half the slices, in a single layer, in the air fry basket.

    Place the basket in rack position 3 and cook for 10 minutes.

    The biscotti should be golden and feel dry to touch. If not, cook them a little longer. Transfer to a wire rack to cool. Repeat with the remaining slices.

    Biscotti can be stored in an airtight container for up to 5 days.
