Beat the butter and sugar with a stand mixer, on high speed for 2 minutes, or until pale.
Add the egg and vanilla and beat on medium speed until combined.
Add the flour, baking soda, salt and spices and mix on medium speed until combined.
Add the oats and raisins and mix on low speed until just combined.
Insert the wire rack into position 5. Set the oven to Cookies, Convection, 165°C, for 13 minutes and press Start to preheat. Meanwhile, continue to the next step.
Line the pizza pan with parchment paper. Measure out 12 x ¼ cups of dough and roll into balls. Evenly space 6 balls on the pan and press to flatten slightly.
Once preheated, place the pan in the oven and cook for 13 minutes.
The cookies should be lightly browned. If not, cook them a little longer.
Stand the cookies on the pan for 5 minutes then transfer to a wire rack to cool completely. Repeat with the remaining balls.
Store in an airtight container for up to 5 days.
