Ingredients
Measurements:
2½ cups (200 g) old fashioned rolled oats
½ cup (40 g) coconut flakes
½ cup (70 g) shelled pistachios
½ cup (75 g) pepitas (pumpkin seeds)
½ tsp sea salt
¼ tsp ground cinnamon
⅓ cup (80 g) coconut oil
⅓ cup (80 ml) maple syrup
¼ cup (50 g) light brown sugar
½ cup (70 g) dried cranberries

Insert the wire rack into position 6. Set the oven to Bake, Convection, 155°C, for 25 minutes, confirm Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.

Place the oats, coconut flakes, pistachios, pepitas, salt and cinnamon in a bowl and stir to combine.

Place the coconut oil, maple syrup and sugar in a saucepan and bring to a boil, then remove from the heat.

Line the roasting pan with foil. Pour the hot syrup over the oat mixture and stir to coat. Transfer the mixture to the roasting pan and spread evenly.

Once preheated, place the pan in the oven and cook for 25 minutes. When the Rotate Remind signals, add the cranberries. Stir to combine, then spread evenly and continue cooking.

The granola should be golden brown. If not, cook it a little longer.

Remove from the oven and allow to cool. If you prefer your granola in clusters, cool for 30 minutes without disturbing, then break into chunks. Alternatively, stir with a spoon to break up into finer pieces.

Serve with yogurt or in large clusters as a snack. Store in an airtight container up to 1 week.
