Banana bread is the perfect answer for overripe bananas. The starch converts to sugar, producing a fantastically moist, soft and totally delicious bread.

Ingredients

  • mashed overripe banana icon
    1½ cups (340 g) mashed overripe bananas

    plus 1 medium banana, extra

  • light brown sugar icon
    1 cup (200 g) light brown sugar
  • large egg icon
    3 large eggs
  • grapeseed oil icon
    ⅓ cup (80 ml) grapeseed oil
  • milk icon
    ⅓ cup (80 ml) milk
  • kosher salt icon
    ½ tsp kosher salt
  • all-purpose flour icon
    1¾ cups (255 g) all-purpose flour
  • baking powder icon
    1 tbsp baking powder
  • pure maple syrup icon
    2 tsp pure maple syrup

Instructions

    Grease and line a 21cm x 11cm x 6cm deep loaf pan with parchment paper.

    Insert the wire rack into position 7. Set the oven to Bake, Convection, 165°C, for 1 hour 10 minutes and press Start to preheat. Meanwhile, continue to the next step.

    Whisk the mashed banana, sugar, eggs, oil and milk together.

  • 4

    Add the salt. Sift the flour and baking powder over the banana mixture and stir to combine.

  • 5

    Pour the batter into the prepared pan. Slice the extra banana in half lengthwise, peel and place cut-side-up on the batter. Brush the banana with the maple syrup.

    Once preheated, place the pan in the oven and cook for 1 hour 10 minutes.

    The banana bread is ready when a skewer inserted into the center comes out clean. If not, cook it a little longer.

    Tip: Don't insert the skewer into any of the cracks as this will give an inaccurate reading.

    Stand in the pan for 10 minutes before turning onto a wire rack.

  • 9

    Slice and serve warm with butter.
