To make the cloud coffee cream, place the cream, vanilla, condensed milk, sugar and chilled espresso in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.
Combine the cold brew and sugar syrup in a large serving glass. Fill the glass with ice. Top with the cloud coffee cream. Garnish with grated chocolate to serve.
