  • full cream milk icon
    150 ml full cream milk
  • dried rose petals icon

For the strawberry cream

  • thickened cream icon
    80 ml thickened cream
  • strawberry puree icon
    50 g strawberry puree
  • caster sugar icon
    15 g caster sugar

Instructions

    To make the strawberry cream, place the cream, strawberry puree and sugar in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.

    Tip: You can use store bought strawberry puree or make your own by blending 40g hulled strawberries with 2 teaspoons of sugar syrup and 1 teaspoon of fresh lime juice, adjusted to taste.

    Fill a medium-sized glass with ice and pour over the cold espresso. Top with milk, then strawberry cream. Garnish with dried rose petals to serve.
