Carefully assemble the processor with the grey spindle and green S-blade in the bowl. Add the eschalot, garlic, cornichons, capers, tarragon and parsley and process until finely chopped, scraping down the side occasionally.
Add the mayonnaise, cornichon juice, lemon juice, salt and cayenne pepper and process to combine, scraping down the bowl occasionally.
Serve as a dipping sauce with the prawns.
