Boozy Irish Coffee
This is cold brew with a kick! Iced coffee gets layered with white chocolate and whiskey for a cheeky concoction that’s all perky leprechaun and the luck of the Irish.

For the milky layer
50 g white chocolatefinely chopped
15 ml whiskey
For the cream mixture
15 ml heavy cream
60 ml heavy cream
30 g unsweetened coconut cream
1 tsp crème de menthe
Instructions
- 1To make the milky layer, place the white chocolate, cream and whiskey in a small saucepan. Stir over medium-low heat until melted and combined. Transfer to an Irish coffee glass and allow to cool.
- 2Meanwhile, to make the cream mixture, place the cream and coconut cream in a liquid measuring cup. Whisk until thick but still pouring consistency, then whisk in the crème de menthe.
- 3Once the milky layer has cooled, pour the cold brew slowly into the glass over the back of a spoon, to prevent the layers mixing. Pour the crème de menthe mixture into the glass over the back of a spoon. Tip: The layers will become more defined on standing.
