  • pork shoulder steak icon
    375 g pork shoulder steak

    cut into 2.5cm pieces

  • green onion icon
    2 green onions

    finely chopped

  • finely grated ginger icon
    1 tsp finely grated ginger
  • clove garlic icon
    2 cloves garlic

    1 tsp sugar
  • salt icon
    ½ tsp salt
  • soy sauce icon
    1 tbsp soy sauce
  • sesame oil icon
    1 tbsp sesame oil
  • iced water icon
    3 tbsp iced water
  • square wonton wrappers icon

Instructions

    Carefully assemble the processor with the grey spindle and green S-blade in the bowl. Add the pork, onions, ginger, garlic, sugar and salt and process until finely chopped, scraping down the side occasionally.

    Add the soy sauce and sesame oil and process until just combined. Remove the food pusher and with the processer on, pour in the iced water through the feed chute.

    Tip: Don’t over process or the mixture will become grainy.

    Arrange 4 wonton wrappers on the countertop, cover the remaining wrappers with a dish towel to prevent them from drying out. Place 2 teaspoons of the filling onto each wrapper. Using the tip of your finger, brush the edge the wrappers with a little water and fold in half to seal, forming a triangle and pleat as desired. Transfer to a plate lined with plastic wrap. Repeat with the remaining wonton wrappers and filling.

    Quarter-fill a large pot with water and bring to a simmer over medium heat. Place a round piece of parchment paper in a large bamboo steaming basket and pierce with a knife to create small holes. Arrange the dumplings on the paper. Set the basket over the pot of simmering water. Cover and steam for 10 minutes, or until just cooked.

    Tip: Steam in batches if your steamer basket isn’t large enough. Alternatively, cook the dumplings in batches, in a large pot of boiling water for 4 minutes, carefully stirring in the beginning to ensure they don’t stick to the base of the pot.

    Once cooked, let the dumplings cool for a minute so they’re not too hot to handle. Serve with your favorite dumpling sauce for dipping or pop them into a warm bowl of wonton soup. Yum!
