Ingredients


Measurements:

  • boneless beef roast icon
    1 (1.4 kg) boneless beef roast

    trimmed

  • extra-virgin olive oil icon
    1 tbsp extra-virgin olive oil
  • kosher salt icon
    1 tbsp kosher salt
  • paprika icon
    1 tbsp paprika
  • ground mustard icon
    1 tbsp ground mustard
  • ground cumin icon
    2 tsp ground cumin
  • freshly cracked black pepper icon
    1 tsp freshly cracked black pepper

For the chimichurri

  • extra-virgin olive oil icon
    ½ cup (120 ml) extra-virgin olive oil
  • finely chopped Italian parsley icon
    ½ cup finely chopped Italian parsley
  • finely chopped cilantro  icon
    ½ cup (15 g) finely chopped cilantro
  • sherry vinegar icon
    ¼ cup (60 ml) sherry vinegar
  • finely chopped shallot icon
    ¼ cup finely chopped shallot
  • clove garlic icon
    2 cloves garlic

    minced

  • red chili flakes icon
    1 tsp red chili flakes
  • kosher salt icon
    Kosher salt

Instructions

  • 1Using kitchen string, truss roast in 2cm intervals. Combine olive oil, salt and spices in small bowl and rub all over roast.
  • 2Place roast in Combi Crisp pan and place in microwave in low position. Press FOOD MENU and select COOK, then BEEF, 1.4kg. Press START to begin cooking.
  • 3Make Chimichurri: Combine all ingredients in a small bowl, season with salt and reserve.
  • 4Let roast rest, covered, for 10 minutes before slicing and serving with Chimichurri.
