For the chicken
3 lb chicken wing drumettes and flats (party wings)
1 tsp salt
1 tbsp vegetable oil
For the five-spice seasoning
1 tbsp soy sauce
1½ tsp Chinese five spice powder
1 tsp garlic powder
1¼ tsp salt
1 tbsp milk powder
1 tsp vegetable oil
1 tsp sesame oil
To serve
Red chili pepperthinly sliced
Green onionthinly sliced
Cucumbercut into sticks
Hoisin sauce

Place the chicken wings in a large bowl. Add the salt and vegetable oil and toss to coat. Place the chicken in a large vacuum seal bag, flatten to a single layer and seal under full vacuum, according to the manufacturer’s instructions. Refrigerate until the water bath has preheated.
Tip: The bag can be dated and labeled for freezing. Alternatively, if you’re not planning to freeze the chicken you can use the microwave-safe, zipper-lock freezer bag method. - 2
Attach the HydroPro Plus to the side of a pot or large vessel (max 12 gallons). Fill with water until approximately halfway up the circulator. Set the temperature to 165°F and the time to 1 hour using Manual Cooking from the main menu and press Start.

Once the water reaches temperature, carefully lower the sealed bag into the water bath, ensuring it is fully submerged.

When the timer signals that the chicken wings are done, place a large strainer over a bowl and drain the chicken wings. Transfer to a tray lined with paper towel and pat dry.

To make the five-spice mix, place the soy sauce, spice powder, garlic, salt, milk powder and oils in a large bowl and whisk to combine. Add the wings to the bowl with the five spice seasoning and toss to coat.

Preheat the oven to Air fry 375°F. Once preheated, cook in the air fry basket for 15 minutes, then broil on high for 4 minutes.
Tip: This recipe has been optimized for the Joule Oven Air Fryer Pro and the Smart Oven Air Fryer Pro Alternatively, deep fry the wings in batches, at 356°F for approximately 5 minutes, or until golden brown. Transfer to a large bowl lined with paper towel to drain. - 7
Transfer to a serving bowl, sprinkle with the red chili and green onions and serve with cucumber sticks and hoisin sauce.
