Insert the wire rack into position 6. Set the oven to Air Fry, Super Convection, 400°F, for 40 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, prepare the potatoes.
Place the potatoes, oil, salt and pepper in a bowl and toss to coat. Place the potatoes in the roasting pan skin side up.
Once preheated, place the pan in the oven and air fry for 40 minutes. When the Rotate Remind signals, toss the potatoes, add the bacon and continue cooking. When there is 5 minutes remaining on the timer, add the onions, stir and continue cooking. Meanwhile, make the dressing.
To make the dressing, place the sour cream, mayonnaise, mustard and lemon juice in a bowl and whisk to combine. Cover and refrigerate until required.
The potatoes should be tender when pierced with the tip of a knife and the bacon crisp. If not, air fry a little longer.
Allow the potato mixture to cool in the pan for 15 minutes.
Place the potato mixture into a large bowl. Add the dressing and parsley and toss to combine.
