Bacon, potatoes and mayo - this one hits the trifecta! With a mustard kick and some fresh parsley, it's great served with your fave grilled steak or chicken. It'll slide right up next to any midweek meal or sit pride of place on your entertaining table.
1Insert the wire rack into position 6. Set the oven to Air Fry, Super Convection, 400°F, for 40 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, prepare the potatoes.
2Place the potatoes, oil, salt and pepper in a bowl and toss to coat. Place the potatoes in the roasting pan skin side up.
3Once preheated, place the pan in the oven and air fry for 40 minutes. When the Rotate Remind signals, toss the potatoes, add the bacon and continue cooking. When there is 5 minutes remaining on the timer, add the onions, stir and continue cooking. Meanwhile, make the dressing.
4To make the dressing, place the sour cream, mayonnaise, mustard and lemon juice in a bowl and whisk to combine. Cover and refrigerate until required.
5The potatoes should be tender when pierced with the tip of a knife and the bacon crisp. If not, air fry a little longer.
6Allow the potato mixture to cool in the pan for 15 minutes.
7Place the potato mixture into a large bowl. Add the dressing and parsley and toss to combine.
