Roasted Tomato Shrimp Cocktail

Measurements:
12 oz truss tomatoeshalved crosswise, core removed
1 red onionsliced into ¼-inch rounds
4 cloves garlicpeeled
1 tbsp extra-virgin olive oilplus extra ¼ cup (2 fl oz)
¾ tsp kosher saltdivided
1½ oz pickled green serrano peppers
½ cup firmly packed cilantro leaves
1 tbsp fresh lime juice
1 avocadopitted, peeled and diced
1 lb cooked, peeled and deveined shrimp

Tostadas or corn chips

Insert the wire rack into position 4 and press Start to preheat. Meanwhile, continue to the next step.

Place the tomatoes, onion and garlic in a single layer in a foil-lined roasting pan. Drizzle the onion and garlic with 1 tablespoon oil, then season with ¼ teaspoon salt.

Once preheated, place the pan in the oven and start the timer. When the Rotate Remind signals, turn the garlic over if it’s starting to brown.
Tip: The preset cooking function is underway, the oven will take it from here. - 4
The vegetables should be lightly charred around the edges. If not, give it A Bit More.

Remove and discard the tomato skins and any tough outer onion layers. Transfer the contents of the pan to a food processor and process for 30 seconds. Add the remaining ¼ cup (2 fl oz) oil, peppers, cilantro, lime juice and ½ teaspoon salt, then process for a further 10 seconds, or until combined.

Pour the tomato mixture into a large bowl. Add the avocado and gently stir to combine. Add the shrimp and mix well.

Serve the shrimp cocktail with tostadas and lime wedges.
