Measurements:

  • truss tomato icon
    12 oz truss tomatoes

    halved crosswise, core removed

  • red onion icon
    1 red onion

    sliced into ¼-inch rounds

  • clove garlic icon
    4 cloves garlic

    peeled

  • extra-virgin olive oil icon
    1 tbsp extra-virgin olive oil

    plus extra ¼ cup (2 fl oz)

  • kosher salt icon
    ¾ tsp kosher salt

    divided

  • pickled green serrano pepper icon
    1½ oz pickled green serrano peppers
  • firmly packed cilantro leaves icon
    ½ cup firmly packed cilantro leaves
  • fresh lime juice icon
    1 tbsp fresh lime juice
  • avocado icon
    1 avocado

    pitted, peeled and diced

  • cooked, peeled and deveined shrimp icon
    1 lb cooked, peeled and deveined shrimp

To serve

  • tostadas or corn chips icon

Instructions

    Insert the wire rack into position 4 and press Start to preheat. Meanwhile, continue to the next step.

    Place the tomatoes, onion and garlic in a single layer in a foil-lined roasting pan. Drizzle the onion and garlic with 1 tablespoon oil, then season with ¼ teaspoon salt.

    Once preheated, place the pan in the oven and start the timer. When the Rotate Remind signals, turn the garlic over if it’s starting to brown.

    Tip: The preset cooking function is underway, the oven will take it from here.

    The vegetables should be lightly charred around the edges. If not, give it A Bit More.

    Remove and discard the tomato skins and any tough outer onion layers. Transfer the contents of the pan to a food processor and process for 30 seconds. Add the remaining ¼ cup (2 fl oz) oil, peppers, cilantro, lime juice and ½ teaspoon salt, then process for a further 10 seconds, or until combined.

    Pour the tomato mixture into a large bowl. Add the avocado and gently stir to combine. Add the shrimp and mix well.

    Tip: The shrimp cocktail can be served immediately, or covered and chilled for several hours.

    Serve the shrimp cocktail with tostadas and lime wedges.
