Place the potatoes in a large pot and add the water and salt, ensuring the potatoes are fully submerged. Bring to a boil over high heat, then reduce the heat to simmer. Cook for 25 minutes, or until the potatoes are tender but still hold their shape.
Place the air fry basket over the roasting pan. Using a slotted spoon, carefully remove the potatoes from the water and evenly space them in the air fry basket to dry and cool.
Pour the oil into a 12-inch cast iron skillet.
Insert the wire rack into position 6, then in Breville+ press Start to preheat and follow along for the rest of the recipe.
When the oven signals, very carefully slide the rack out, add the potatoes to the hot oil and start Autopilot. When the oven signals turn the potatoes and continue cooking. When the oven signals again, turn the potatoes and add the garlic. Meanwhile, prepare the seasoning salt.
Place the salt, paprika and garlic powder in a small bowl and mix to combine.
The potatoes should be crisp and golden brown. If not, give it a bit more.
Carefully remove the potatoes from the oil and place on a tray lined with paper towel.
Sprinkle the potatoes with the seasoning salt and toss to combine.
