Cut the potatoes into 3-inch long and 1-inch thick wedges.
Insert the oven rack into position 3 Down. Set the oven to Air Fry, Super Convection, 400°F, for 30 minutes and press Start to preheat. Meanwhile, continue to the next step.
Combine the garlic powder, onion powder, paprika, cumin, coriander, cayenne, salt and pepper in a bowl.
Toss the potatoes in the oil and the spice mix. Place the potatoes in a single layer, evenly spaced apart, in the air fry basket.
Once preheated, place the roasting pan on the rack to catch any drips during cooking. Place the basket into position 1 and air fry for 30 minutes. When the oven signals shake the basket and continue cooking. Meanwhile, continue to the next step.
To make the lime aioli, whisk together the mayonnaise, lime juice and garlic. Cover and refrigerate until ready to serve.
The sweet potatoes should be well browned and cooked through. If not, press A Bit More.
Sprinkle the aioli with lime zest and the wedges with salt.
