Carefully assemble the processor with the grey spindle and green S-blade in the bowl. Add the oats and process until finely ground. Divide the oat flour evenly between two small bowls and set aside until required.
To prepare the crust, add the nuts to the processor bowl and pulse until finely chopped. Return one portion of the oat flour to the processor bowl and add the dates. Pulse until coarsely chopped, then process for 60 seconds, scraping down the side halfway through. With the processor on, slowly pour in the coconut oil through the feed chute and process for a few seconds then pulse several times to combine.
Grease the base and side of an 8-inch springform pan separately. Invert the base and line it with parchment paper. Place the ring over the base and clip it into position to secure the parchment. Line the side of the pan with parchment paper.
Transfer the crust mixture to the prepared pan. Using a flat-bottomed, straight-sided glass, press the mixture firmly over the base and up the side. Place on a flat tray and refrigerate until firm. Meanwhile, continue to the next step.
To prepare the filling, add the cottage cheese to the clean processor bowl and process for 1 minute. Scrape down the side, then process again until very smooth.
Place the remaining oat flour, cashew butter, honey, date syrup, tahini, lemon juice and salt in the processor bowl and process until smooth, scraping down the side as needed.
Sprinkle the psyllium evenly over the surface of the filling mixture. Process for 10 to 15 seconds until well combined.
With the processor on, slowly pour in the melted coconut oil through the feed chute. Process for 30 to 60 seconds, or until glossy and well combined.
Pour the cheesecake mixture into the prepared crust and chill for at least 6 hours, to set or overnight. Meanwhile, continue to the next step.
Insert the wire rack into position 5. Set the oven to Roast, Convection, 320°F, for 15 minutes and press Start to preheat.
To prepare the sesame crumb, in a foil-lined roasting pan, scatter the sesame seeds and salt in an even layer. Once preheated, place the pan in the oven and cook for 15 minutes, stirring halfway through cooking.
The sesame seeds should be evenly toasted. If not, cook a little longer.
Transfer the seeds to a medium bowl. While still hot, add the lemon zest and sugar, stirring well to combine. Allow to cool before using.
Remove the cheesecake from the pan. Slice using a warm, dry knife, wiping the knife clean between slices. Serve sprinkled with the sesame seed mixture.
