Using a food processor, slice the potatoes into 1/8-inch thick slices and place in a bowl.
Add the cream, salt, pepper, thyme and garlic to the potatoes and mix to coat.
Layer the potatoes in a 8-inch square baking dish. Pour over the cream that is left in the bowl and sprinkle with the cheese. Cover with a sheet of parchment paper then foil. The parchment paper stops the cheese sticking to the foil.
Insert the wire rack into position 6. Set the oven to Bake, Convection, 350°F, for 1 hour 15 minutes, confirm Rotate Remind and press Start to preheat.
Once preheated, place the dish in the oven and cook for 1 hour 15 minutes. When the Rotate Remind signals, remove the foil and parchment paper, rotate the dish and continue cooking.
The gratin should be golden brown. If not, cook it a little longer.
Sprinkle with chives and cracked pepper and serve.
