Place all the brining ingredients in a bowl and whisk to combine.
Place the turkey in a large resealable bag and pour over the brine. Seal and massage the bag. Refrigerate for 12 to 16 hours to brine.
Remove the turkey from the bag and drain well. Wipe off the excess brine using paper towels. Return to the refrigerator, uncovered, for 2 hours to dry.
Insert the wire rack into position 6, then in Breville+ press Start to preheat and follow along for the rest of the recipe.
For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack on top. Place the turkey on the rack. Brush with the melted butter and season with the salt and pepper.
Once preheated, place the pan in the oven and start the timer.
The turkey is ready when a meat thermometer inserted into the thickest part of the breast, away from the bone, reads a minimum 158°F. If not, give it a bit more.
Remove from the oven, cover loosely with foil and allow to rest for 15 minutes.
Carve the turkey and serve.
