For the buttermilk brine

  • buttermilk icon
    4 cups (32 fl oz) buttermilk
  • kosher salt icon
    ¼ cup (2½ oz) kosher salt
  • sprig thyme icon
    10 sprigs thyme
  • bay leaf icon
    5 bay leaves
  • head garlic icon
    1 head garlic

  • black peppercorns icon
    1 tbsp black peppercorns

    crushed

  • grated lemon zest icon
    2 tbsp grated lemon zest

For the turkey

  • turkey breast icon
    4.7 lb turkey breast

    on the bone

  • butter icon
    3 tbsp (1½ oz) butter

    melted

  • kosher salt icon
    2 tsp kosher salt
  • freshly ground black pepper icon
    Freshly ground black pepper

Instructions

  • 1Place all the buttermilk brining ingredients in a bowl and whisk to combine.
  • 2Place the turkey in a large resealable bag and pour over the brine. Seal and massage the bag. Refrigerate for 12 to 16 hours to brine.
  • 3Remove the turkey from the bag and drain well. Wipe off the excess brine using paper towels. Return to the refrigerator, uncovered, for 2 hours to dry.
  • 4Insert the wire rack into position 6. Select ROAST/CONVECTION/340°F/1 hour 25 minutes and press START to preheat.
  • 5For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack on top. Place the turkey on the rack. Brush with the melted butter and season with the salt and pepper.
  • 6Once preheated, place the pan in the oven and cook for 1 hour 25 minutes, or until a meat thermometer inserted into the thickest part of the breast, away from the bone, reads a minimum 158°F.
    Tip: The shape of the turkey can alter the cooking time. For best result, using a probe, test for doneness 5-10 minutes before the end of the cook.
  • 7Remove from the oven, cover loosely with foil and allow to rest for 15 minutes.
  • 8Carve the turkey and serve.
