Cooking spray
1 cup (8½ oz) peanut butter
¾ cup (5 oz) granulated sugar
1 large egg
1 tsp vanilla extract

Spray the roasting pan with cooking spray and line with parchment paper.

Insert the oven rack into position 2 Down. Set the oven to Bake & Roast, no fan, 325°F, for 12 minutes and press Start to preheat. Meanwhile, continue to the next step.

Place the peanut butter, sugar, egg and vanilla in a bowl and stir until mixture forms a paste.

Roll 2 tablespoon measurements of the dough into balls and flatten slightly. Place 6 in the prepared pan, evenly spaced apart. Sprinkle with salt.

Once preheated, place the pan in the oven and bake for 12 minutes.

Cookies should be lightly browned and firm around the edges. If not, press A Bit More.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it. - 7
Remove the cookies from the oven and stand in the pan for 5 minutes before transferring to a wire rack. Repeat with the remaining cookies.

The cookies can be stored in an airtight container for up to 1 week. For a great dessert idea, sandwich them with your favorite ice cream.
