Baked Gnocchi with Mushroom, Bacon and Peas

1 yellow onioncoarsely chopped
8 oz bacon slicescut into ½-inch strips
8 oz baby bella mushroomsstalks removed, quartered
2 tbsp olive oil
1 tsp kosher saltplus extra to season
Freshly ground black pepperto season
1 lb gnocchi
1 cup (8 fl oz) heavy cream
1⅓ cups (7 oz) frozen peas
⅔ cup (1¾ oz) grated parmesan cheesedivided
1 tbsp flat-leaf parsleyplus extra to serve
½ cup (1¾ oz) shredded mozzarella cheese

Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 400°F, for 20 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.

Place the onion, bacon, mushrooms, oil, salt and pepper in a large bowl and toss to combine. Transfer to the roasting pan.

Once preheated, place the pan in the oven and air fry for 20 minutes. When the Rotate Remind signals, stir and continue cooking. Meanwhile, continue to the next step.

Bring a large pot of water to a boil over high heat. Add the gnocchi and cook according to the package instructions, then drain.

Adjust the oven, select Phase Cook for P1 and set the oven to Roast, Super Convection, 400°F, for 2 minutes. Press Confirm for P2 and set the oven to Broil, High, for 3 minutes and press Start to preheat. Meanwhile, continue to the next step.

Place the mushroom mixture in a large heatproof bowl. Set the pan aside. Add the cream, peas, half the parmesan and the parsley. Season with pepper and salt, then add the gnocchi and gently stir to combine.

Pour the gnocchi mixture into the roasting pan. Sprinkle with the mozzarella and remaining parmesan.

When the oven signals, place the pan in the oven and roast for 2 minutes in P1. The oven will automatically switch to P2.

The cheese should be golden brown. If not, broil it a little longer.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it. - 10
Scatter with parsley and serve.
