Ingredients

● 1.5 pounds (1.5kg) chuck roast, halved and trimmed

● 3 teaspoons kosher sal

● 1 teaspoon freshly ground black pepper

● ¼ cup (30g) all-purpose flour

● 1 tablespoon olive oil

● 1 medium onion, sliced

● ¼ cup (60ml) red wine

● 2 carrots, ¾" slices

● 2 cloves garlic, smashed

● 1 bay leaf

● 2 sprigs fresh thyme

● 1 sprig fresh rosemary

● 1 cup (240ml) beef or chicken broth

Directions

1. Season the roast halves with salt and pepper. Put the flour in a large bowl and toss the roast in it to coat evenly.

2. Preheat a separate pan. Heat the olive oil until shimmering and then brown the roast in two batches, about 2 minutes per side.

3. Add the onion and cook until softened, about 2 minutes. Add the red wine and cook for an additional minute or until the wine has mostly reduced.

4. Insert the roast into the slow cooker along with the carrots, garlic, bay leaf, thyme, and rosemary. Pour the broth over the top.

5. Set your slow cooker on 5 to 7 hours for high, or 9 to 11 hours for low.

6. When cooking has completed, remove the roast to a cutting board and cover loosely with foil. Skim any fat off the top of the sauce and discard the bay leaf, thyme, and rosemary sprigs.

7. Slice roast across the grain, place on a warmed platter, and top with sauce and vegetables.

Chicken adobo

2. Transfer the chicken, marinade, and remaining ingredients to the cooking bowl.

3. Set your slow cooker to 5 to 7 hours on high, or 9 to 11 hours on low.

4. When cooking has completed, remove the chicken to a platter and cover it with foil to keep it warm.

5. Pour sauce over the chicken and sprinkle with sliced green onions. Serve with steamed white rice.

Pulled pork

● 1 teaspoon brown sugar

● 1 cup (240ml) chicken broth

● ½ cup (120ml) ketchup

● ¼ cup (60ml) molasses

● 2 tablespoons Dijon mustard

● 1 tablespoon Worcestershire sauce

Directions

1. In a small bowl, mix together smoked paprika, garlic powder, onion powder, dried thyme, ground cumin, brown sugar, salt, and black pepper. Rub this spice mixture evenly over the pork shoulder, ensuring it's well coated.

2. Slightly brown the seasoned pork in a pan to maximize flavor before placing it in the slow cooker.

3. In a separate bowl, whisk together apple cider vinegar, chicken broth, ketchup, molasses, Dijon mustard, and Worcestershire sauce. Pour this mixture over the pork in the slow cooker.

4. Set your slow cooker low for 8-10 hours or high for 4-6 hours. The pork is ready when it easily shreds with a fork, and has reached an internal temperature of 145°F.
