Place the air fry basket in the top position. Insert the wire rack in the bottom position and place the roasting pan on the rack so it sits beneath the basket to catch any drips during cooking. Set the oven to Air Fry, Super Convection, 400°F, for 15 minutes and press Start to preheat. Meanwhile, continue to the next step.
Place the wings on paper towels and pat dry to remove any excess moisture.
Place the milk powder, salt and oil in a large bowl and whisk to combine. Add the wings and mix to coat.
Once preheated, carefully place the wings in the basket, evenly spaced apart and air fry for 15 minutes. Meanwhile, make the Buffalo sauce.
To make the Buffalo sauce, place all the Buffalo sauce ingredients in a large bowl and whisk to combine. Set aside.
To make the blue cheese sauce, place the blue cheese, sour cream and mayonnaise in a bowl and whisk to combine. Add the lemon juice, milk and garlic and whisk until well combined. Set aside.
When the oven signals at the end of cooking, remove the basket from the oven and transfer the wings to the Buffalo sauce and turn to coat. Remove the roasting pan from the oven and discard the cooking juices. Place the wings and any sauce from the bowl in the roasting pan.
Move the wire rack to the top position. Place the pan in the oven and select Broil, 500, for 4 minutes and press Start. Broil the wings until caramelized.
Stand the wings in the pan for 5 minutes to absorb some of the pan juices.
Crumble some blue cheese over the blue cheese sauce and serve the wings with the sauce and celery sticks.
