Tomato Soup with Ham and Cheese Toasties
Creamy roasted tomato soup with a rustic grilled toasty of melting ham and cheese…it’s hard to know which takes center stage! Serve as a comforting weeknight meal lazy or weekend lunch.

Measurements:
2 lb very ripe tomatoes
4 cloves garlicsliced
2 tbsp olive oil
Freshly ground black pepperto season
2 tsp demerara sugar
2 tsp kosher saltdivided
2 tbsp mayonnaise
2 tsp Dijon mustard
4 slices whole wheat bread
6 slices Havarti cheese
4 slices leg ham
3 tbsp sour creamplus extra for serving
1 oz butterat room temperature
Instructions
- 1Insert the oven rack into position 1 Down. Set the oven to Air Fry, Super Convection, 375°F, for 30 minutes and press Start to preheat. Meanwhile, continue to the next step.
- 2To prepare the tomatoes, remove and discard the core then coarsely chop. Place the tomatoes, garlic, oil, pepper, sugar and 1 teaspoon salt in a large bowl and toss to combine. Transfer the tomato mixture to the roasting pan.
- 3Once preheated, place the pan in the oven and air fry for 30 minutes. Meanwhile, continue to the next step.
- 4Place the mayonnaise and mustard in a small bowl and mix to combine.
- 5Spread the bread with the mayonnaise mixture. Top 2 slices of bread with 2 slices of cheese and 2 slices of ham. Place another slice of cheese on top and sandwich with the remaining bread.
- 6The tomatoes should be roasted and soft. If not, press A Bit More.Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
- 7Adjust the oven to Air Fry, Super Convection, 425°F, for 8 minutes and press Start. Meanwhile, continue to the next step.
- 8Place the tomatoes in a blender with the sour cream and remaining 1 teaspoon salt. Blend until smooth. If your blender lid doesn't have safety clips, firmly hold the lid down when turning the blender on. Taste and adjust seasoning, if necessary.
- 9Wash and dry the roasting pan. Spread the tops of the sandwiches with half the butter, turn the sandwiches over and place in the roasting pan. Spread the other side with the remaining butter.
- 10When the oven signals, place the pan in the oven and air fry the sandwiches for 8 minutes, turning over halfway through cooking.
- 11The bread should be golden brown, and the cheese melted. If not, press A Bit More.Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
- 12Spoon the soup into 2 bowls. Top with a dollop of sour cream and freshly ground pepper. Cut the sandwiches in half and serve with the soup.
