Insert the oven rack into position 1 Down. Set the oven to Air Fry, Super Convection, 375°F, for 30 minutes and press Start to preheat. Meanwhile, continue to the next step.
To prepare the tomatoes, remove and discard the core then coarsely chop. Place the tomatoes, garlic, oil, pepper, sugar and 1 teaspoon salt in a large bowl and toss to combine. Transfer the tomato mixture to the roasting pan.
Once preheated, place the pan in the oven and air fry for 30 minutes. Meanwhile, continue to the next step.
Place the mayonnaise and mustard in a small bowl and mix to combine.
Spread the bread with the mayonnaise mixture. Top 2 slices of bread with 2 slices of cheese and 2 slices of ham. Place another slice of cheese on top and sandwich with the remaining bread.
The tomatoes should be roasted and soft. If not, press A Bit More.
Adjust the oven to Air Fry, Super Convection, 425°F, for 8 minutes and press Start. Meanwhile, continue to the next step.
Place the tomatoes in a blender with the sour cream and remaining 1 teaspoon salt. Blend until smooth. If your blender lid doesn't have safety clips, firmly hold the lid down when turning the blender on. Taste and adjust seasoning, if necessary.
Wash and dry the roasting pan. Spread the tops of the sandwiches with half the butter, turn the sandwiches over and place in the roasting pan. Spread the other side with the remaining butter.
When the oven signals, place the pan in the oven and air fry the sandwiches for 8 minutes, turning over halfway through cooking.
The bread should be golden brown, and the cheese melted. If not, press A Bit More.
Spoon the soup into 2 bowls. Top with a dollop of sour cream and freshly ground pepper. Cut the sandwiches in half and serve with the soup.
