Ingredients
Measurements:
1 tbsp olive oil
1 yellow onionfinely chopped
8 oz ground beef
½ tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
½ tsp ground cumin
½ tsp ground coriander
½ tsp kosher salt
1 tsp granulated sugar
1 cup (8 fl oz) canned crushed tomatoes
1 tbsp chipotle paste
5 oz corn chips
1 cup (4¼ oz) shredded cheddar cheese
1 small red onionfinely chopped
2 small Roma tomatoesseeds removed and cut into ½-inch dice
1 small avocadopeeled, seed removed and cut into ½-inch dice
½ cup (4¼ oz) sour cream
⅓ cup cilantro leaveschopped
1 tbsp pickled sliced jalapeño peppersto serve

Place a large skillet or frying pan over high heat. Add the oil and yellow onion and cook, stirring occasionally for 3 minutes, or until the onion is soft and translucent. Add the beef and cook, stirring, until browned. Add the spices, salt and sugar and cook for 1 minute, or until fragrant. Add the canned tomatoes and chipotle paste and simmer for 5 minutes. Remove from the heat.

Insert the oven rack into position 2 Down. Set the oven to Air Fry, Super Convection, 400°F, for 7 minutes and press Start to preheat. Meanwhile, continue to the next step.

Spread the corn chips evenly over the foil lined roasting pan. Spoon over the meat sauce and sprinkle with the cheese.

Once preheated, place the pan in the oven and air fry for 7 minutes. When the oven signals, rotate the pan and continue cooking.

The corn chips should be golden brown, and the cheese melted. If not, press A Bit More.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it. - 6
Sprinkle the nachos with red onion, Roma tomatoes and avocado. Spoon over the sour cream. Sprinkle with the cilantro, jalapeño and serve.
