Ingredients
Measurements:
⅓ cup (2¾ fl oz) olive oildivided
1 lb store-bought pizza dough
7 oz bacon slicescut into approximately ½-inch pieces
10½ oz sweet Italian pork and fennel sausages
2 tbsp cornmeal
All-purpose flourfor dusting
1 cup (3½ oz) shredded mozzarella cheese
2¾ sliced pepperoni
1½ cups (12 fl oz) marinara sauce
¼ cup (¾ oz) grated parmesan cheese
Instructions
- 1Place 1 teaspoon of the oil in a medium bowl. Add the dough and turn to coat. Cover with plastic wrap and set aside in a warm place for 30 minutes, to come to room temperature. Meanwhile, continue to the next step.
- 2 Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 350°F, for 16 minutes, enable Rotate Remind and press Start to preheat.
- 3Scatter the bacon pieces evenly over the roasting pan. Once preheated, place the pan in the oven and air fry for 16 minutes. When the Rotate Remind signals, stir the bacon (taking care as it may splatter) and continue cooking. Meanwhile, continue to the next step.
- 4Remove the sausage meat from the casing by pinching and squeezing approximately 1 tablespoon chunks onto a plate. Cover with plastic wrap and set aside.
- 5Cut parchment paper into a circle, slightly smaller than the cake pan.
- 6Place the cornmeal and ¼ cup (2 fl oz) oil in a small bowl and stir to combine. Pour the mixture into a 9-inch round cake pan and tilt the pan to evenly coat the base.
- 7Place a sheet of parchment paper on the countertop. Lightly grease the top edge and place a second sheet, slightly overlapping on top. Flour generously, then place the dough in the center of the parchment and dust with flour. Using a floured rolling pin, roll the dough into a 13-inch circle.Tip: Lining the countertop with parchment paper ensures the dough won't stick.
- 8Place the parchment paper circle in the center of the dough and fold the edges over the parchment paper. Transfer the dough to the cake pan and gently pull and fold the edge of dough over the rim. Remove the parchment paper and press the dough into the pan.
- 9Select Phase Cook for P1 and set the oven to Pizza, Super Convection, 400°F, for 20 minutes. Press Confirm for P2 and set the oven to Pizza, Super Convection, 350°F, for 20 minutes and press Start to preheat. Meanwhile, assemble the pizza. Scatter half the mozzarella over the dough. Add the sausage meat, pepperoni, bacon and the remaining mozzarella. Add the marinara sauce and spread evenly. Scatter with the parmesan. Fold the dough edge inwards so it sits below the rim of the pan. Brush the dough with the remaining 1 tablespoon oil.
- 10When the oven signals, move the wire rack to position 7. Place the pizza in the oven and cook for 20 minutes in P1. The oven will automatically switch to P2.
- 11The dough should be golden. To test if the dough is cooked, insert a kitchen thermometer into the center of the pizza until it gently touches the dough. Pizza is ready when it reads a minimum of 190°F. If not, cook it a little longer.Tip: Ensure the thermometer doesn’t touch the pan or you’ll get an inaccurate result.
- 12Remove from the oven and stand for 10 minutes to allow the pizza to firm up.
- 13Remove the pizza from the pan. Slice and serve.
