Instructions
- 1Heat the oil in a saucepan over medium heat. Add the onion and cook, stirring for 3 minutes, or until just soft. Add the garlic and cook, for 1 minute, or until fragrant. Add the spices and cook for a further 1 minute.
- 2Add the tomatoes, sugar and salt and stir. Bring to a boil, reduce the heat to low and simmer, stirring occasionally for 20 minutes, or until thickened. Meanwhile, continue to the next step.
- 3Place all the meatball ingredients listed below in a bowl and mix well.
- 4For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack in the pan. Roll heaped tablespoons into balls. Place them on the rack, evenly spaced apart.
- 5Insert the wire rack into position 4.
- 6Once preheated, place the pan in the oven and start the timer.
- 7The meatballs should be browned and cooked through. If not, give it a bit more.
- 8Spoon the tomato sauce into a serving dish and place the meatballs in the sauce. Serve sprinkled with the feta and cilantro and couscous on the side.
