Ingredients
Measurements:
¼ cup (2 fl oz) olive oil, plus 1 tsp
divided
1 lb store-bought pizza dough
3½ oz drained pineapple chunks (in syrup)
2 tbsp cornmeal
½ cup (4 fl oz) marinara sauce
¼ tsp kosher salt
or to taste
¼ tsp dried oregano
½ cup (1¾ oz) shredded mozzarella cheese
2¼ oz smoked ham
cut into ½-inch pieces
1 tbsp grated parmesan cheese
Instructions
1Place 1 teaspoon oil in a medium bowl. Add the dough and turn to coat. Cover with plastic wrap and set aside in a warm place for 30 minutes, to come to room temperature. Meanwhile, continue to the next step.
2Insert the wire rack into position 7. Place the foil-lined roasting pan on the rack to catch any drips during cooking. Set the oven to Air Fry, Super Convection, 400°F, for 20 minutes and press Start to preheat.
3Place the pineapple evenly spaced in the air fry basket. Once preheated, place the basket in position 3 and air fry for 20 minutes. Meanwhile, continue to the next step.
4Combine ¼ cup (2 fl oz) oil and cornmeal in a small bowl and stir. Pour the mixture into a 9-inch round cake pan and tilt to evenly coat the base.
5The pineapple should be golden and slightly dried. If not, air fry a little longer.
6Remove the roasting pan from the oven. Move the wire rack to position 6 and leave the door open to allow the oven to cool for proofing. Transfer the pineapple to a plate.
7Place the dough in the center of the pan and push towards the edge of the pan. Place the pan in the oven. Set the oven to Proof, 100°F, for 20 minutes and press Start. Meanwhile, continue to the next step.
8To make the pizza sauce, place the marinara sauce, salt and oregano in a medium bowl. Stir to combine and set aside.
9Once the dough has proofed, gently push it out to ensure the base is a uniform thickness.
10Adjust the oven to Pizza, Super Convection, 400°F, for 20 minutes and press Start. Meanwhile, spread the sauce over the dough, leaving a ½-inch border. Top with half the mozzarella, the ham, pineapple, parmesan and the remaining mozzarella.
11Once preheated, place the pan in the oven and cook for 20 minutes.
12The cheese should be melted and the dough lightly browned. To test if the dough is cooked, insert a kitchen thermometer into the center of the pizza until it gently touches the dough. Pizza is ready when it reads a minimum of 190°F. If not, cook it a little longer.
Tip: Ensure the thermometer doesn’t touch the pan or you’ll get an inaccurate result.
13Remove from the oven and allow the pizza to stand in the pan for 5 minutes to firm up.
