Loaded with old fashioned oats and bursts of raisins, these cookies are so easy to make. The brown sugar adds a lovely caramel flavor and produces a deliciously soft and chewy cookie.
1Beat the butter and sugar with a stand mixer, on high speed for 2 minutes, or until pale.
2Add the egg and vanilla and beat on medium speed until combined.
3Add the flour, baking soda, salt and spices and mix on medium speed until combined.
4Add the oats and raisins and mix on low speed until just combined.
5Insert the wire rack into position 5. Set the oven to Cookies, Convection, 325°F, for 13 minutes and press Start to preheat. Meanwhile, continue to the next step.
6Line the pizza pan with parchment paper. Measure out 12 x ¼ cups of dough and roll into balls. Evenly space 6 balls on the pan and press to flatten slightly.
7Once preheated, place the pan in the oven and cook for 13 minutes.
8The cookies should be lightly browned. If not, cook them a little longer.
9Stand the cookies on the pan for 5 minutes then transfer to a wire rack to cool completely. Repeat with the remaining balls.
10Store in an airtight container for up to 5 days.
