Beat the butter and both sugar with a stand mixer, on high speed for 2 minutes, or until pale.
Add the egg and vanilla and beat on medium speed until combined.
Add the flour, baking soda, salt and spices and mix on medium speed until combined.
Add the oats and raisins and mix on low speed until just combined.
Insert the oven rack into position 2 Down. Set the oven to Bake & Roast, No Fan, 330°F, for 13 minutes and press Start to preheat. Meanwhile, continue to the next step.
Line the roasting pan with parchment paper. Divide the dough into twelve ¼ cup measurements and roll into balls. Evenly space 4 balls in the pan and press to flatten. Place the remaining balls in the refrigerator while cooking.
Once preheated, place the pan in the oven and bake for 13 minutes.
The cookies should be lightly browned. If not, press A Bit More.
Stand the cookies in the pan for 5 minutes then transfer to a wire rack to cool completely. Repeat with the remaining balls.
Enjoy these homestyle cookies fresh from the oven with a glass of cold milk or tucked into a lunchbox for a sweet treat. Once cooled, store them in an airtight container—they’ll keep soft and chewy for up to 5 days.
